Rico Brisket grew out of years of cooking for the people closest to him. Ricardo — “Rico” — has long been the designated family chef, known for staying up through the night tending the smoker before birthdays, holidays, lake days, and family gatherings around Austin.
With roots in Aguascalientes, Mexico and a deep love for Texas barbecue, Rico became known among friends and family for his 16-hour smoked brisket that needs no sauce, brown sugar burnt ends, and beef ribs that fall off the bone. What started as cooking for family slowly turned into catering, pop-ups, and weekends serving tacos from his kayak around Lady Bird Lake.
